Summer Cravings with Stonyfield and prAna (Giveaway!)

It’s summer here in New England and I am ready for it!

I love the heat, sun, and weekends away at the beach. I’m looking forward to BBQs, being outside, and celebrations that include fireworks.

The folks at Stonyfield and prAna asked me, as part of Stonyfield’s blogger program, to write about my summer cravings. I immediately thought of ice cream! One of my favorite things to do in the summer, after a day of swimming, is to enjoy an ice cream cone with my family. “Let’s go get ice cream” always gets my kids hopped up and giggling about favorite flavors and the best toppings.

Unfortunately, for my kids, I rarely have ice cream in the house – which makes going out for it so special. With summer cravings in mind, though, I was inspired to fill up the freezer with my own, homemade icy goodness. But I wanted to use the easiest recipe possible. I mean crazy easy, and that’s when semifreddo became my brand-new best friend.

Semifreddo is a partially frozen Italian dessert that tastes just like ice cream and fulfills my “crazy easy” requirement (no ice cream maker needed). In fact, for me, the hardest part about making semifreddo was keeping my kids from checking on it in the freezer every five minutes! Check out the recipe below, which I made using Stonyfield’s Greek yogurt.

Servings: 8
1 pound strawberries, hulled, quartered
⅓ cup sugar
1 tablespoon white wine vinegar
2 cups heavy cream
Pinch of salt
⅔ cup sweetened condensed milk
½ cup Stonyfield plain whole milk Greek yogurt

1. Cook strawberries and sugar in a medium pot over medium heat, stirring occasionally, until strawberries have broken down into a thick, chunky jam (they should not be syrupy), 10–15 minutes. Stir in vinegar; let cool.
2. Whip cream and salt until cream holds a medium-stiff peak. Gently whisk in sweetened condensed milk and yogurt until completely blended.
3. Gently fold in half of strawberry jam, just enough to create streaks, then gently fold in remaining jam (mixture should look marbled with pockets of jam).
4. Transfer to a medium bowl or loaf pan and freeze until firm, at least 4 hours and up to 3 days.

In addition to ice cream, my other summer craving is being able to wave bye bye to sweaters and snow boots, and instead embrace cute dresses and sandals. After a winter wrapped up in wool and layers, it’s a great feeling to dress for warm weather. I’m kicking off the season with “the quintessential summer dress” from prAna, called the Quinn, which I’m wearing – in the black lace color – in the photo in this piece. The dress is made out of performance fabric, has a built-in bra, and is incredibly comfortable.
